Many people ask me about pairing Indian food and wine and since it is time for New Year's celebrations, I thought I would make some suggestions for those of you who can't live without your bubbly.
For best pairing, I recommend a demi-sec like Pol Roger's ‘Extra Cuvée de Réserve’ Rich Champagne. Brought to you by our friends at Churchill Cellars (who also import Sula Wines from India) this is an excellent and affordable Champagne in the off-dry style.
The addition of a small dosage of sugar rounds out this Champagne and makes it a suitable companion for sweet, lightly savory desserts and spicy food.
